I'd go with a body scissors Endurance Challenge: Maximum pressure vs time to tap. Maybe 5 rounds with a 2 minute limit to see who can hold out for the longest time overall. Thing is, with a competition like this, both opponents need to be close in size and weight. After all, a 250 vs 160 wouldn't be much of a challenge, would it? The variations are unlimited.
Maybe we could set a timer, say 5 minutes, where you start with me in your bodyscissors, my goal will be to escape, your goal will be to keep me trapped and also to see how many submissions you can get...
